Mitchell Beazley, part of the Octopus Publishing Group, has commissioned New French Table from the mother-and-daughter team behind the Roux empire, Giselle and Emily Roux.
Editorial director Eleanor Maxfield acquired world rights direct from the authors. The book will be published on 7th September, priced £25 in hardback.
The collection, pitched as "a modern French cooking bible for the lifestyles of today", intends to prove French food is "easy and accessible" and "light, fresh and bursting with flavour".
Giselle Roux was born in the Ardèche. She has worked in the restaurant business for many years and now works alongside her husband, Michel Roux Jr, as the secretary at Le Gavroche restaurant in London. Emily Roux is their daughter. She trained as a chef at the Institut Paul Bocuse in Lyon before moving to Paris to work at the Michelin-starred restaurant Akrame. She is now back in London, where she is working as a consultant in the food industry.
Giselle Roux commented: “This book is about a family food heritage, the spirit and essence of passing down recipes from mother to daughter. Capturing the moment in the kitchen that make us all smile with joy, only the food 'en famille' has this power, with traditional flavours of Provence and exciting new avant garde cooking from the next generation of the Roux’s chefs”.
Emily Roux added: “The close relationship between mother and daughter becomes even closer when food is involved, especially when they are French and Roux. The book traces recipes of childhood, from the hand me down favourites to the next generations classic to be”.
