Bloomsbury Absolute is set to publish Calum Franklin's debut cookbook in the autumn.
Company founder and publisher Jon Croft acquired world all-languages rights for The Pie Room, which will be published in September 2020.
Croft said: "It’s always a particularly lovely feeling to be publishing a book by an author who you know is the very best at his or her craft. Calum Franklin is without doubt the very best and also the complete master of all he surveys from his small yet perfectly formed pastry kingdom in The Pie Room [restaurant] on High Holborn [in central London].
"The pastry creations that come from The Pie Room are works of pure deliciousness and so it is with real pleasure that Bloomsbury Absolute is to publish his brilliant first book later this year, thus enabling all passionate pie lovers to recreate The Pie Room’s best at home."
Named after his eatery in Holborn, The Pie Room draws on Franklin's culinary experiences working at The Ivy and Aurora restaurants, and as his time as a senior sous chef at Roast in Borough Market, prior to heading up the kitchen at Rosewood London’s Holborn Dining Room. The book's recipes are dedicated to pies.
Franklin said: "I wrote this book to translate the skills and techniques we have mastered in The Pie Room to everybody’s kitchens at home through achievable and delicious recipes.
"My hope is that this book plays a part in the current revival of traditional pie craft and gets flour and butter rubbing together in as many kitchens as possible."
