Octopus' Mitchell Beazley imprint has acquired a new cookbook from Persian chef Sabrina Ghayour, celebrating vegetable dishes.
The book, entitled Bazaar: Fresh, Flavourful & Deeply Satisfying Vegetarian Recipes for Every Occasion, will be the fourth cookbook from Ghayour, following Persiana, Sirocco, and Feasts.
Stephanie Jackson, publishing director at Octopus Publishing Group, acquired world rights all languages from Martine Carter at Sauce Management, to publish in April 2019 as a £26 hardback.
Octopus promises “dishes full of easy-to-achieve flavours and depth that would win over even the most die-hard carnivore”, with recipes including beetroot halva tart with pistachio nuts, roast vegetable bastilla and baklava buns. Chapters in the book divide recipes into: Light Bites & Sharing Plates; Soups & Bowl Comfort; Pies, Bread and Pastries; Salads for All Seasons; Moreish Mains; Store-Cupboard Sustenance; and Spectacular Sides.
Jackson said: "The launch of a new Sabrina Ghayour is a major event – and Bazaar is simply stunning. Sabrina never fails to deliver – and this new collection of recipes is every bit as beautiful, accessible and enticing as we’ve all come to expect. We’re incredibly proud to be working with Sabrina once again."
Ghayour commented. "I am incredibly excited to share my new book and recipes with everyone. I wanted to ensure that every recipe was deeply satisfying not just to vegetarians but meat-eaters also. In the last couple of years, I’ve been eating much less meat than before and therefore found myself having to come up with new meatless recipes to win my friends and family over as meat is very much a staple in Persian and Middle Eastern culture and if I knew if I left it out, they had better be really flavourful recipes!"
