Canongate has snapped up Between Two Waters, Scottish chef Pamela Brunton’s book of "food philosophy".
Senior commissioning editor Helena Gonda acquired world English rights from Rachel Mills at RML, and the book will be published in hardback, e-book and audiobook in September 2024.
"Part memoir, part manifesto on the future of feeding the world, and brilliant feminist critique of the food business, Between Two Waters is a fiercely original work of narrative non-fiction, from one of the world’s most exciting thinkers about food, sustainability and landscape," the synopsis says. "As a chef, Pam set out to discover what makes ‘modern Scottish food’ and the book traces her journey to answer this question, while reflecting on how the immersive experience of ‘destination restaurants’ such as Inver can offer a way of understanding wider land and food culture."
Located in Loch Fyne, Brunton’s restaurant, Inver, is the only restaurant in Scotland to receive a Michelin Green Star, which praises sustainability as well as the quality of the food. She said: "It’s an honour to contribute to some of the most critical conversations happening in the world today. Our food choices affect everything that matters most to us humans, and it’s in understanding where our collective and personal food habits come from that we can influence where they go next.
"Between Two Waters is my personal tale of why I eat and cook as I do, but all of us have a story like this one to tell."
Gonda added: "Pam is one of the most impressive chefs at work today and I’m excited to be working with her to publish Between Two Waters, which is both a love letter to Scotland and articulates her own philosophy on food and cooking. This book re-evaluates the priorities for food systems here and across the globe."
