Ebury Press has signed Beat the Budget, the first cookbook by Mimi Harrison, the content creator behind the Beat the Budget brand.
Commissioning editor Sam Crisp acquired world rights directly from the author, with a scheduled publication date of 8th June 2023.
Mimi Harrison is a self-taught cook and recipe developer and, motivated by her experience of reaching for cheap and unhealthy food while studying at university, created her Beat the Budget blog and Instagram page to share recipes. According to the publisher, her “5 lunches for £5” reels have been viewed by millions of people.
Ebury Press says: “Beat the Budget is packed with easy, affordable recipes that take the stress out of mealtimes. Whatever your skill level, this book is here to help you put tasty, satisfying food on the table every day. With tips on how to meal prep and guidance on how to adapt many recipes for your slow cooker or air fryer this book is an important aid for everyone feeling the pressure of the cost-of-living crisis.
“Including recipes costing £1.25 or less per portion and sections for breakfast (healthy and filling to start the day right), 15 minutes or less (to save time and money), one-pot wonders (easy recipes that don’t stack the dishes), fakeaways (all your favourites at home) and more.”
Crisp said: “Ebury are so proud to be publishing Mimi’s first book. The cost-of-living crisis is impacting us all and Mimi’s incredible recipes show that delicious food doesn’t have to be expensive. With smart budget-friendly swaps and simple tips, Beat the Budget is a fantastic resource that delivers reliable, affordable recipes that you will come back to again and again to feed yourself, your friends and your family.”
Harrison commented: “I started my page at uni just over four years ago and I can’t believe that this year my dream of writing a cookbook came true with Ebury. Nothing makes me happier than seeing my followers enjoy my food and I am so excited to share the recipes and meal plans from the book. I hope that Beat the Budget will help anyone struggling in the current cost of living crisis.”
