Hodder & Stoughton has secured Borough Market: The Knowledge, the new cookbook from Angela Clutton and the London market.
Liz Gough, executive publisher, acquired world rights from Zoe Ross at United Agents. The cookbook will be published on 27th October 2022.
Each chapter of The Knowledge contains trader knowledge pages from a different area of produce from the market, including "The Fishmongers Chapter", which teaches the reader how to shuck oysters; "The Fruiterers chapter", reminding us of the importance of seasonal fruit; and "The Dairy Chapter", explaining how and why cheese rind is so vital when considering flavour. Food writer and cook Clutton’s recipes are paired alongside, ranging from parsnip gnocchi and smoked garlic butter with crisped sage leaves, to hot and sour papaya curry and asparagus with quail eggs and shaved truffle.
"As a charity, Borough Market’s stated purpose is to work ’for the benefit of the community’," said Kate Howell, director of communications and engagement at Borough Market. "One of the many forms this takes is the sharing of knowledge.
