HQ has scooped an “inspirational” sustainable food cookbook from TV chef and writer Gizzi Erskine.
Editorial director Kate Fox acquired world all language rights to Restore from Severine Berman at The Muthaship agency. It will be published on 29th October 2020 in hardback and e-book.
According to the synopsis: “Restore will be a collection of over 80 delicious recipes that have sustainability at their core. Exploring the stories behind the food on our plates, it will show the best way to make the most of our food, whether that’s eating root-to-shoot or nose-to-tail, and using Gizzi’s trademark techniques to maximise flavour.”
Erskine, whose previous book was Slow (HQ) has most recently found success at a four-month residency, the Nitery, at St Martins’ Lane Hotel, and is founder of sustainable burger bar Pure Filth.
She said: “This will be a cook’s companion full of practical steps and advice that can help push readers towards living and eating more sustainably. I want to look at the reality of what we need to support our environment, our agricultural industry and bodies, through achievable, delicious recipes that are a celebration of life.”
Fox added: “Gizzi is a world-class chef with a real passion for food. Her desire to educate us all about what we eat and how we cook is inspirational – and her recipes are some of the tastiest I’ve ever tried! During a difficult time in the world, it’s never been more important to understand how to eat seasonally and sustainably.”
