Kyle Books has acquired Tarkari: Vegetarian and Vegan Indian Dishes with Heart and Soul, the first cookbook from Michelin-starred chef, Rohit Ghai.
Judith Hannam, publishing director, acquired world rights in all languages from Heather Holden-Brown at HHB Agency. It will be published on 14th October.
Tarkari, meaning "vegetable" in Urdu, will feature "innovative" vegetarian and vegan dishes and pay homage to the food that Ghai ate growing up in his native Punjab. Recipes range from "creative starters like Malabar cauliflower, to big, bold curries such as jackfruit masala and lotus root kofta, as well as breads, rice, dips and pickles".
After finding a love of food in his mother's kitchen, Ghai studied Indian cuisine at the Institute of Hotel Management in New Delhi, and worked at hotel groups across the country. He has worked at some of London's most high-profile Indian restaurants, including Gymkhana and Jamavar – where his menus resulted in him becoming the first Indian chef in the world to win a Michelin star within a year – before opening his own restaurant, Kutir, in Chelsea in 2018.
Ghai said: "Tarkari is full of vegetarian and vegan recipes that are delicious, full of flavour and come from the heart. Cooking for people is my biggest passion and it's a privilege to be working with Kyle Books and Octopus Publishing Group bringing some of my favourite recipes, and the dishes I cook most at home, to the public.’
Hannam commented: "Indian food in the UK is enjoying a golden age and it’s chefs like Rohit Ghai that we have to thank for that, so I am thrilled to be publishing his first book, Tarkari. The recipes – every one of them either vegan or vegetarian – are more personal and homely than those found on his restaurant menus, but all of them showcase the four key elements that are his trademark – flavour, texture, look and aroma."
