Kyle Books has scooped a “masterclass” in pastry-making from Instagram star and TV chef Julie Jones covering everything from delicate tarts to comforting pies.
Joanna Copestick, publisher at Kyle Books, acquired world rights in all languages from Heather Holden Brown at HHB agency. The Pastry School will be published in March 2020 at £25.
The synopsis states: “Julie Jones is renowned for her highly decorative bakes packed with bold layers of flavour and texture. In this book she provides all the know-how to make pastry right every time and includes classics such as both sweet and salted shortcrust, as well as versatile gluten-free and vegan and more advanced choux and inverted puff, all of which can we swapped in or out of recipes with a helpful key.”
Chapters include fruit, cream & cheese, vegetables, nuts, meat & fish and crunch & crumb and contain more than 50 recipes, from a chicken, chorizo and spinach pie and mini tartiflette pies to a chamomile and panna cotta tart.
Trained chef Jones started her Instagram account as a means of documenting the bakes she made with her mother who was suffering from early onset dementia. Her following has grown exponentially, with 122,000 Instagram fans alongside TV and radio appearances. She is due to appear on the first episode of ITV's "Beautiful Baking" with Juliet Sear later this year. In 2018 she won the Observer Food Monthly Best Instagram Feed Award and Waitrose Food Magazine has named her as one of the UK's most influential bakers.
Jones said: “Pastry, it seems, is the nemesis of many a home baker. I truly want to change that.”
