Michael Joseph has bagged Easy, a new cookbook from Roxy Pope and Ben Pook, creators of the vegan platform So Vegan.
Non-fiction publisher Dan Hurst acquired world rights from Anna Dixon at YMU. The book will be published in December 2023.
Easy will contain 100 "fuss-free, fast and delicious" vegan recipes making it the "essential" vegan cookbook showing how plant-based food "can be both accessible and ready in a flash". Divided into chapters based on the cooking time, from 15 minutes to 30 minutes or more, and desserts, Easy provides "healthy and cost conscious" recipes such as spicy pasta e fagioli, crispy chilli tofu salad, creamy pesto rosso gnocchi and cinnamon swirl banana bread.
So Vegan is one of the world’s leading vegan platforms according to the publisher with over 1.5million followers. Easy is the third cookbook from Pope and Pook who commented: "Food plays a huge role in our shared experiences. It brings people together in ways that – after the past few years – feel more important now than ever. Which is why we created Easy. We want to get as many people as possible sitting around dinner tables enjoying delicious vegan food.

Hurst added: “There is a common misconception that vegan food has to be complicated to be delicious, but many of the best plant-based meals can be rustled up from what many of us already have in the fridge. Roxy and Ben have pulled together a collection of vibrant meals that prove just that."
