Mitchell Beazley has signed Higgidy Clever with Veg: Fabulous, fuss-free vegetarian recipes by Camilla Stephens, founder of food company Higgidy.
Publisher Alison Starling acquired world rights in all languages from Jane Turnbull at Jane Turnbull Literary Agency. The cookbook will be published in March 2024.
Higgidy Clever with Veg is the third cookbook from Higgidy and contains over 100 "simple" vegetarian recipes. The dishes include "easy roasting-tin suppers", "speedy salads" and "one-pan family favourites" with photography by Jason Ingram, shot in Stephens’ kitchen.
Starling said: “With more than a quarter of all evening meals in the UK being vegetarian or vegan, there’s a big market for recipe books that make cooking delicious meat-free meals really easy and Higgidy Clever with Veg does just that. Camilla Stephens is on a mission to move more vegetables to the centre of the plate in a way that is genuinely fuss-free for the time-poor home cook, and this is one of those books where you’ll want to cook absolutely everything.”
Stephens added: “I am passionate about cooking with veg and helping people cram more veg onto their plates. Making vegetables the focus of our day-to-day eating is one of the most important things we can do for our health and the planet. The recipes in this book reflect how I cook at home – simple, seasonal, satisfying veg-focused food which, as well as being meat free, is surprisingly tasty and I believe can make you feel happy."
