Kew Publishing has commissioned and will publish The Kew Gardens Cookbook on 1st June 2022 with a host of big name chefs involved.
Edited by food writer Jenny Linford, the book will feature more than 60 recipes from the likes of Thomasina Miers, Monica Galetti, Raymond Blanc, Claudia Roden, Diana Henry, Yotam Ottolenghi and Ken Hom.
“As someone who has long loved Kew Gardens, to be asked to edit The Kew Gardens Cookbook was a real thrill,” said Linford. “Working with such wonderful chefs and food writers on this collaborative project was very special indeed.”
Recipes have been donated in support of Kew research examining potential future foods for an increasing population. There are 50,000 different plant species that are edible yet 90% of our food energy intake comes from 15 crop plants, Kew said.
The collection will showcase a “joyful diversity” of dishes from comforting suppers to glorious cakes, Vietnamese summer rolls, curries and street food snacks, a classic French gratin and English suet pudding. These meals will be complimented with innovative ingredients and techniques such as using leaves as edible wrappers, adding roots and grains to cakes and tarts and putting fragrant flower petals into fruit-based jellies. Publisher Gina Fullerlove commented: “We are tremendously excited to be publishing this wonderful anthology of vegetarian recipes from international cuisines; huge thanks go to Jenny and our generous contributors.”
The Kew Gardens Cookbook will accompany Food Forever at Kew Gardens, a summer programme of talks, activities and art installations to demonstrate how what we eat can help us protect the planet, combat climate change and biodiversity loss. The programme will run from 21st May to 18th September 2022.
