Pavilion has snapped up the first cookbook by influencer, chef and "viral sensation" Emma Petersen, who first gained fame under her previous social media name @thefitlondoner.
Pavilion publishing director Laura Russell acquired world all-language rights to Healthy-ish from Emily Sweet at Aevitas Creative Management.
The publisher said Healthy-ish "bridges the gap between dietary trends like high-protein, plant-based, and air-fryer cooking, combining elements of each into one highly accessible cookbook". The book will contain simple recipes that are "plant-forward, cost-conscious, convenience focused and free of ultra-processed foods", which "makes it easier for people to maintain balance and sustain healthy eating habits".
Petersen gained a loyal following online, with over 666,000 Instagram followers with her "forgiving approach to cooking" that acknowledges the challenges people face in cooking from scratch every day.
She said: "My cooking style doesn’t neatly fit into any one category – it’s not low-carb, not entirely plant-based, and certainly not fixated on calorie or macro counts. So, when asked, I often say, ’Well, it’s healthy... ish’.
"The recipes in this book are quick, easy, and packed with nutritional diversity, featuring wholesome, unprocessed ingredients. But they also don’t shy away from comforting touches like melty cheese or a crispy breadcrumb coating. Because healthy-ish eating is all about striking the balance between nourishment and comfort.”
Russell said: “Emma’s generosity of spirit shines through in Healthy-ish. Her approach is realistic, modern and compassionate – reminding us that food should nourish both body and mind. I’m all for ’-ish-ness’ because what’s life without the occasional drizzle of chocolate?”
Pavilion will publish Healthy-ish on 8th May 2025.
