Penguin Life has snapped up a new book on the science of fermented foods by scientist and entrepreneur Dr Johnny Drain.
Commissioning editor Jamie Birkett bought world rights directly from the author for publication in 2025.
In Ferment for Flavour, Drain will explore the science of fermentation and the potential of fermented foods to aid our health. The synopsis adds: "Drawing on his work at the cutting-edge of food science and sustainability, Drain will show readers how delicious, cost-effective fermented products can supercharge their health and provide a better alternative to supermarket-sourced produce.
"Exploring the centuries-old history of fermentation, Drain will also provide a selection of recipes from his travels and conversations with top chefs around the world, as well as offering guidance on how to cook with fermented foods at home."
