Penguin Michael Joseph (PMJ) has scooped Easy Air Fryer Bakes, the first book from food blogger Lucy Parissi.
Publisher Dan Hurst acquired world rights from Kay Peddle at Colwill & Peddle for publication on 6th June 2024.
"Lucy is such a talented and wonderful baker and one of the most creative people I have had the joy to work with", said Peddle. "I am happy for her and the Penguin Michael Joseph team and am excited for readers to discover Lucy’s recipes and the joy of baking in their air fryers."
Easy Air Fryer Bakes showcases 80 "delicious" and "impressive" baking recipes that can be made in an air fryer, from simple bakes such as chocolate chip cookies and cinnamon muffins to "decadent" desserts including chocolate lava cakes and sticky toffee pudding. The book also includes savoury baking recipes and breads such as spanakopita triangles and herby potato bread.
Parissi runs the Supergolden Bakes blog and posts her recipes on her Instagram account under the handle @supergolden88. She commented: "I am thrilled to be publishing my debut cookbook Easy Air Fryer Bakes with Dan and the incredible team at Penguin Michael Joseph. People don’t often think of baking when they think of all the things their air fryer can do. I am excited to show how easy and achievable it is to use your air fryer to create the most delicious and mouth-watering bakes.”
Hurst added: "It is clear that air fryers are here to stay so I was delighted when the proposal for this brilliant book landed in my inbox and promised to open up a whole new way of using them. Not only is Lucy an incredible baker but she has been using air fryers for over a decade and, as such, has put together the most delicious collection of bulletproof recipes that span the entire spectrum of sweet and savoury baking. From cookies, bars and loaves to celebration cakes, desserts, and festive bakes, I was amazed at what you can achieve in your air fryer.”
