Mitchell Beazley has commissioned a new book from Saiphin Moore, the founder of Rosa's Thai Cafe.
Rosa's Thai Cafe: The Vegetarian Cookbook is the follow-up to her debut, Rosa's Thai Cafe: The Cookbook. It will be published in hardback on 31st May at £20. Publishing director Stephanie Jackson acquired world rights all languages from Alex Moore at Rosa’s.
In the book, Moore has created over 100 "delicious and simple" recipes for the book's readership of "adventurous, Thai-loving" vegans and vegetarians. Dishes featured include Tom Yum Mixed Mushrooms, Panang Curry with Tofu, Stir fried Aubergine with Soybean Sauce and Butternut Red Curry.
Rosa's is a Thai cafe group, founded by Alex and Saiphin Moore, that has grown from a street-food stall in Brick Lane in 2008 to 11 London restaurants (Soho, Spitalfields, Stratford, Carnaby Street, Islington, Brixton, Chelsea, Victoria, Hampstead, London Fields & Seven Dials). Before setting up the group, Moore grew up on a mountain farm in Khao Kho, Northern Thailand, where she learned to cook with ingredients brought straight from field to wok. In Hong Kong, in 2001, she and her husband Alex set up their own Thai takeaway and later a sit down restaurant named Tuk Tuk Thai which they sold in 2006 when they moved to London.
Jackson said there had been "massive growth in the demand" for meat-free and plant-based recipes giving the new veggie cookbook "wide commercial appeal". "We’re thrilled to be publishing such a brilliant follow-up to her original bestseller," she said.
Moore added: "This book is a compilation of my favourite family recipes and features veggie reinventions of classic Thai dishes I love and can be found on the menu in some of my restaurants. I hope the recipes will inspire others to cook more Thai vegetarian dishes, and grow a fondness of my home cuisine."
