Square Peg has landed The Green Cookbook: Easy Vegan & Vegetarian Dinners from The Roasting Tin series author Rukmini Iyer.
Mireille Harper acquired world all-language rights from Felicity Blunt at Curtis Brown. Jenny Dean, deputy publishing director at Vintage, is now editing the book. The Green Cookbook will be published on 6th June 2024.
The Green Cookbook is billed as “the spiritual successor" to The Green Roasting Tin. The 75 new recipes in The Green Cookbook “are packed with flavour, quick to make and short on washing up – a dream combination for time-poor home cooks” according to the publisher. “With chapters on batch cooking, lunchboxes and family meals, this is the perfect cookbook to help get delicious dinners on the table every night of the week with minimum effort and maximum flavour” it said.
Dean commented: “Rukmini has a brilliant track record in creating the cookbooks that solve everyone’s most-pressing cookery needs. The Green Cookbook builds on these bestseller successes and promises to be a huge perennial hit with vegetarian, vegan and an ever-growing audience of flexitarian home cooks.”
Iyer added: “I’m delighted to be publishing The Green Cookbook with the team at Vintage. I’ve found these recipes so helpful while juggling work and new motherhood, and I hope they’ll be just as useful for busy working households, time-pressed families and home cooks who enjoy flavour-packed, low-effort dishes. I’ve enjoyed designing the book with feedback from Roasting Tin readers in mind: following requests for more gluten-free and vegan recipes, at least half are gluten-free and plant-based, with most of the vegetarian recipes easily veganisable if needed. Flexible, low-hassle and flavour-packed cooking is always my goal, and I hope this book helps readers achieve it just as it’s helped me.”
Joanna Whitehead, head of translation at Penguin Random House UK, has sold Dutch rights to Becht, part of the Gottmer Publishing Group, who will publish alongside the UK edition in June 2024. The Roasting Tin series has been published in eight countries.
