Yellow Kite will publish Rachel Ama's vegan cookbook One Pot: Three Ways: Save Time with Vibrant, Versatile, Vegan Recipes on 26th August 2021.
Hodder Lifestyle and Yellow Kite executive publisher Liz Gough acquired world rights from Alice Russell at The Found in an exclusive submission. Hachette US sister imprint Mobius will publish simultaneously.
Inspired by her Caribbean and African roots, Ama creates recipes by moving through "stations" in the kitchen, weaving together fresh ingredients, pantry staples and, most importantly, the "flavour station", where she adds spices, dried herbs and those all-important sauces to really bring each dish to life.
Her second book will contain 80 new recipes with a focus on versatility.
The publisher explained: "Versatility is at the heart of this book which totally reframes vegan cooking by creating one main centrepiece dish that make flavour-packed vegetables the worthy hero of every meal. Each one pot or pan centrepiece can be spun out over the next few days, into three different and delicious options that give you the makings of a new feast using yesterday’s leftovers and a few new ingredients. With exciting and tasty ways to use each centrepiece, you’ll have dinner part-ready-and-waiting, making plant-based eating feel even more achievable every day."
Gough said: "I am so thrilled that Rachel is joining the Yellow Kite family. Her simple, delicious one-pot dishes reflect the way people like to cook and eat these days – using fresh, seasonal, local plant-based produce, and with minimal hassle. Her food tastes absolutely amazing, and I know people are going to love just cooking once, and then rolling out up to three different options using that centrepiece. This saves time, reduces food waste and inspires us all to try plant-based food. I can’t wait for the publication of this gorgeous, inspiring book."
Ama, who won the Observer Food Monthly Rising Star award in 2019, commented: "I've loved every second of writing this book! It's an exact reflection of how I cook — and eat: one pot, pan or tray served up with a side of dreams. I hope it convinces everyone that vegan food isn’t bland, intimidating or overly complicated. It’s tasty, versatile, exciting and genuinely feel good food. I hope you love it all!"
Rachel Ama’s Vegan Eats: Tasty Plant-Based Recipes for Every Day was published by Ebury Press in 2019.
